Sauerkraut recipes, German Sauerkraut Salad

Sauerkraut seems more a taste of Southern Germany than from the North. Sauerkraut is served traditionally with a Wurst (Sausage). Though not everyone likes it, those that do know that it tastes great and is good for the blood stream. The following recipes for Sauerkraut are a great way to prepare Sauerkraut. In order to use the following recipe, you will need sauerkraut of course, which can be found in the canned food section of most supermarkets.
German Sauerkraut Salad
2 cups sauerkraut (1 lb. can)
1/2 c. sugar
1/2 c. thinly sliced celery
1/2 c. thin strips green pepper
1/2 c. shredded carrot
1/4 c. chopped onion
Cut sauerkraut strands in shorter pieces if required. Stir in sugar and let stand 1/2 hour. Add remaining ingredients. Cover bowl tightly and chill in refrigerator at least 12 hours before serving.
Makes 8 servings (1/2 cup each).
