
Germans love potato pancakes as much as the next guy, so they must have gotten something write in their recipe. One recipe I’ve used for making German Potato Panckes uses nothing more than Potato, Onion, Milk, Flour, Eggs and Vegetable Oil.
This Potato recipe makes quite a bit, so modify to make more or less as needed:
oil (preferably vegetable oil)
2 pounds potatoes, peeled and quartered
2 eggs
1 large onion, cut in quarters
1/2 cup milk (soy works as well)
1/2 – 1 cup flour (as needed)
2 teaspoons salt
Grate potatoes and onion into a bowl. Add milk, then stir in flour, salt, and eggs. Mix well.
In a large, heavy skillet heat 1/2 inch frying oil until hot. Drop potato batter (1/4 cup per pancake) into skillet and fry until golden brown and crisp on both sides.
Drain on a paper towel.

I will be testing out your recipe and will get back to you on my thoughts. I ate these as a young girl, but never asked for the recipe. Ours seemed thinner and we would put fruit, jelly, jam or German Sausage, sometimes with egg in them rolled up. Marji
